Turkey Wild Rice Soup


1/3 cup uncooked wild rice

1 Tablespoon vegetable oil

4 cups water

1 medium onion, chopped

1 or 2 ribs of celery, chopped

1 or 2 carrots, finely chopped

1/2 cup butter

1/2 cup flour

3 cups chicken or turkey broth

2 cups cream

1/2 teaspoon dried rosemary

salt and pepper to taste

3 cups of left-over turkey (already cooked)


INSTRUCTIONS: Rinse rice and drain. In a medium saucepan combine rice, oil and water; bring to a boil. Reduce heat, cover and simmer for 30 minutes. Meanwhile, in a large kettle cook onion, celery and carrot in butter until vegetables are almost tender. Blend in flour; cook and stir for 2 minutes. Add broth and undrained rice. Bring to a boil; cook and stir until slightly thickened. Stir in cream, rosemary, salt and pepper. Reduce heat and simmer uncovered for about 20 minutes or until rice is tender. Stir in left-over turkey and heat through.
