Cherry Glazed Cheesecake Pie

2 eggs 

3/4 cup milk 

1 teaspoon vanilla 

1 Tablespoon lemon juice 

1/4 teaspoon grated lemon zest 

1 cup cottage cheese 

1/2 cup sugar 

2 Tablespoons flour 

1/4 tsp salt

Cherry pie filling 

Cool whip or whipped cream.



INSTRUCTIONS: Preheat oven to 425° F

Combine first 9 ingredients in blender container and blend until completely mixed, scraping down sides as needed. Pour into one 8-inch unbaked pastry shell. Bake for 10 minutes. Reduce temperature to 350° F

 and continue baking for 20 to 25 minutes or until the filling is set. Check by inserting table knife near center of pie. Cool. Refrigerate. 


To serve, top slices with a couple spoonfuls of cherry pie filling and a dollop of whipped cream.
