Roasted Sweet Potatoes and Onions

"Our Thanksgiving and Christmas celebrations would not be complete without this," Joanna McKenzie writes. "This gourmet side dish is super easy to make and the aroma is heavenly."

2 large sweet potatoes, peeled and cut into 1 inch chunks
2 medium sweet onions, cut into 1-inch chunks
3 Tablespoons olive oil
1/4 cup amaretto liqueur
1 teaspoon dried thyme
salt and pepper
1/4 cup sliced almonds, toasted
 
Preheat oven to 425° F.
Toss potatoes, onion, oil, amaretto, thyme, salt, and pepper together.
Cover and bake for 30 minutes. Uncover and bake an additional 20 minutes.
Sprinkle with almonds and serve.
