Brie Apple Butter Cups

These appetizers offer a wonderful savory taste -- and are made even faster if you use mini fillo or puff-pastry shells.

1 sheet puff pastry, thawed
1/2 cup apple butter
4 ounces Camembert or Brie cheese cut into 1/2 inch cubes
1/4 cup chopped pecans
1/4 teaspoon cinnamon

Preheat oven to 375° F.
Unfold puff pastry. Cut into 36 squares.
Press into 2-inch diameter, 1-inch deep mini muffin cups which have been sprayed with nonstick cooking spray. Bake for 8 minutes and then press centers with a large wooden spoon handle, just to tamp down “puff” at the bottom of the cup, and bake 6 more minutes.
Spoon 1/2 teaspoon of apple butter into each cup, top with cheese cube and sprinkle with nuts and cinnamon. Bake 3 more minutes.
Place on festive plate to serve.
